Japanese restaurant Tonkotsu has unveiled a new menu for autumn/winter – and it features the welcome return of the ever-popular Miso Mushroom ramen.
The restaurant, which prizes itself on its homemade noodles and stocks, located exclusively in Birmingham on Level 1 at premium department store Selfridges, has brought back the vegetarian/vegan ramen dish – comprising Konbu and shiitake stock, miso base, its feature homemade noodles and shimeji and enoki mushrooms – following customer demand.
It also also improved its Tokyo ramen and added a Yuzu Mixed Greens side dish. The restaurant has also introduced venison mazesoba, which comprises thick homemade noodles, topped with minced miso venison and walnuts, chopped spring onions, redcurrants, nori and Burford Brown egg yolk. Serve with the Yuzu pale ale – a collaboration between Tonkotsu and Mondo Brewery Company to accompany the dish.
The new menu also has a range of gyoza, side dishes such as sea-salt edamame beans, chicken katsu and tenderstem broccoli, hiyashi cold salads and katsu curries.
