La Becasse restaurant in Ludlow lands Michelin Star

The tranquil oak-panelled restaurant and state-of-the art kitchens of La Becasse restaurant, under the guidance of Head Chef Will Holland and his dedicated team, can at last celebrate their 18 months of hard graft and dedication to local produce and fine dining with their much deserved Michelin Star 2009.

Owned by much acclaimed Alan Murchison who has held his Michelin star since 2003 at his Lortolan restaurant in Reading, it is of good 'stock'.

Chef Will Holland has been building on his life-long passion for cooking the finest seasonal, ingredients, and his team work closely with local suppliers and producers, and wherever possible use produce that is 'Local to Ludlow'.

Previously Hibiscus Ludlow, which has since relocated to Mayfair in London and won itself 2 Michelin stars in the process, La Bécasse (French for Wood-pigeon in case you are wondering), has, in the past 18 months been earning many awards and accolades.  A prestigious Michelin Star was awarded in January 2009; before that La Bécasse became Ludlow's only restaurant with three AA Rosettes, was included in Harden's Restaurant Guide as well as The Good Food Guide published by Which Magazine and was voted "Best Fine Dining Restaurant" in the West Midlands by Metro within four months of launching.

"Fine dining should not be exclusive, pretentious or an intimidating experience," says Chef Will Holland.

"At La Bécasse we aim to provide great food, knowledgeable and professional service, and memorable experiences for all our guests. Winning a Michelin star within 18 months of opening is an acknowledgement of the huge effort that every member of the team has put in since we started."

'Prior to running the kitchen at La Bécasse, Will worked under numerous inspirational and renowed Chefs at various select Michelin starred Country House Hotels & Restaurants including: Homewood Park, Bath under the direction of Gary Jones (now Executive Chef for Raymond Blanc at Le Manoir aux Quat' Saisons) and Gravetye Manor, Sussex where Will worked under Chef de Cuisine Mark Raffan.   Prior to taking the helm at La Bécasse, Will spent three years as Head Chef under Alan Murchison at L'ortolan.   Will has twice been a semi-finalist in the Gordon Ramsey Scholarship Competition and completed stages at Hambleton Hall, Rutland, Hibiscus, Ludlow and various top London restaurants including Tom Aikens, The Square and Le Gavroche.'

Will Holland is passionate about food. Striving for perfection and originality, his cooking is best described as a modern British interpretation of the classic French repertoire. The result is sublime seasonal dishes using local produce wherever possible. Expect to find intense flavours, unusual ingredient combinations, innovative techniques and exciting presentation.
