Local award winning pub and restaurant, the Hundred House
Country Inn, Norton, Near Telford, have just launched its awareness
video to highlight the importance of buying local meats, and
tracing their suppliers, right back to the breeders, all within 5
miles of the pub.
Chef Patron Stuart Phillips has teamed up with James day of
Dining website guide www.Dinewithus.co.uk to shoot a
series of videos, with local budding camera man Tim Sargent of Mint
Videos, which highlight the importance of provenance - sourcing of
known ingredients within the locality.
The videos which begin with Stuart picking herbs in the Hundred
House gardens, then demonstrating how to stuff a loin of local pork
in his AA Rosette kitchens - He then travels to discuss the
sourcing of the meat from his local butcher, Keith Alderson, in
Bridgnorth, just 3 miles away. Keith explains the importance he
puts on sourcing locally, and the assurance of quality of meats
which it creates - Keith who has been supplying Stuart for over 15
years is a keen supporter of regional producers, and sourcing the
best meats for his customers.
Finally the video visits 'Pugh's Farms and feeds' in Monkhopton
near Bridgnorth, and sees the rare Gloucester Old Spot pigs, happy
in their 2 acres of farmland - lovingly bred by farmer Tom Pugh,
who explains the importance of the animals welfare, and the quality

Stuart commented "We all hear about local produce, but customers
never really see where their meat comes from - Although we often
serve up to 100 diners on a Sunday who enjoy tucking into their
joints served in our restaurant, they are not fully aware of its
origin, so we thought we would take some time out and show them the
source of their meat, and what contributes to its intense flavour
which our regulars tell us that they come back for time and time
again -something I am very proud off."

are finding that our regular visitors to the website are looking
for great value, but are still aware of supporting those
restaurants who offer good, consistent quality, and in turn support
the local producers. Food miles are becoming even more important as
this helps keeps prices low, and offer consistent value and

diners can find those venues who source locally".
